Omelet Yakisoba
【Makes 2 servings】Omu-soba is a fun Japanese dish where stir-fried noodles (yakisoba) are wrapped in a fluffy omelet.

How to make it
Heat a frying pan over medium heat. Add the yakisoba noodles and stir-fry for about 5 minutes until lightly browned. Transfer to a plate.
In the same pan, stir-fry the pork belly slices until they start to brown.
Add the cabbage and tempura crumbs (tenkasu) on top of the pork. Then place the cooked noodles over the vegetables. Cover and let steam for a few minutes.
Once the cabbage is softened, stir everything together and add the yakisoba sauce. Stir-fry briefly to coat evenly.
In a microwave-safe bowl, mix the beaten eggs, mayonnaise, and cheese. Microwave for about 30 seconds, stir well, then microwave again for another 30 seconds. (Adjust time depending on your microwave.)
Plate the yakisoba mixture, then top with the fluffy egg-cheese omelet.
