Okonomiyaki with Mochi (Japanese Rice Cake)

How to make it
In a bowl, mix water and okonomiyaki flour. Cut the mochi into bite-sized pieces.
Add egg, cabbage, green onion, and tempura scraps to the batter. Mix gently with a spoon to incorporate air evenly.
Heat a griddle to about 200°C. Pour most of the batter onto the griddle and spread it evenly using the corner of a spoon. Place the mochi on top, then cover with the remaining batter.
After 3 minutes, place sliced pork on top of the okonomiyaki.
Increase the griddle temperature to 240°C, flip the okonomiyaki, cover with a lid, and steam cook for about 4 minutes.
Remove the lid, flip again, and cook for another 3 minutes.
Add okonomiyaki sauce, aonori, and bonito flakes to taste.
